I’m a creature of habit—such a creature of habit that I often go a full week eating the exact same thing for dinner without ever really noticing or caring. I get stuck in a rut with what tastes super good and don’t change it up until I get absolutely sick of it. I think the same is going to happen with my pizza meat & veggies. One night I just wanted pizza, or something that tasted like pizza. Low and behold my pizza concoction that, I’m not kidding you, tastes just like a slice of pizza without the actual slice.

Ingredients (makes about 2 servings):
-1 yellow squash
-1/2 bell pepper (any color, I like red the best)
-1/8c banana peppers
-1/4c Parmesan cheese
-1/2c tomato sauce
-About a pound of ground turkey
-creole seasoning, pepper, garlic powder, onion powder, Italian seasoning
Brown turkey in a pan over medium/high heat and season with creole, pepper, garlic and onion powder. Set turkey aside. In the same pan on medium/high heat start sautéing the onion, after a few minutes add the squash and zucchini. Once those are cooked (should be slightly brown, or to whatever desired done-ness you like) throw in the bell pepper and banana peppers. Turn heat down to low and add the tomato sauce and Italian seasoning, stir, turn off heat and sprinkle cheese on top.
